solubility: excellent solubility in cold and warm water. but not soluble in organic solvent except dimethylformamide; dimethyl sulfoxide (dmso);
stability: compared with other hydrocolloid, heallan forms low viscous but non-gelling solution in water. and the viscosity is only slightly affected by changes in ph or salt.
lubricity: solution of heallan is a newtonian fluid. although the viscosity is very low, it has good lubricity adhesiveness: very strong adhesiveness after dried, suitable for making dried food, pill & pelleting.
film forming: it is easy to form film on food and metal. meantime, the solution could form water-soluble,transparent, coriaceous film. this film has very strong oxygen barrier property and could be used as smells keeper, water keeper & oil defender.
