Chemical properties:
White or yellow or light gray, or light brown coarse to fine powder. Almost odorless, slimy texture. Soluble in 20 times, form a milky white viscous colloidal solution, is weakly acidic. Strong heat resistance. Almost insoluble in ethanol and other organic solvents. Wet with ethanol, glycerin, granulated sugar syrup, or mixed with more than 3 times granulated sugar can improve solubility. It is more stable in acidic solutions than in alkaline solutions. It is usually classified by degree of esterification. The methoxy content ≥7%(42.9% esterification degree) is called high ester pectin.
The content of methoxy group ≤ 7% is called low ester pectin. Non-reversible gels can be formed when the content of soluble sugar (such as sucrose) is ≥60% and the pH value is in the range of 2.6 ~ 3.4. The gelling ability increases with the content of methoxy group. The main part of the carboxyl group is methyl ester, and its performance varies with the degree of esterification and polymerization. In low ester pectin, some methyl esters are converted into primary amides. It is not affected by sugar and acid content, but must be cross-linked with Ca2+, Mg2+ and other bivalent metal ions to form gel (reversible due to heat and agitation). It is widely present in the cell wall of fruits, vegetables (turnip, carrot) and other plants, and the content of citrus peel is relatively high.
